Basil Pesto Stuffed Mushrooms

Preparation Time: 15 minutes
Cooking Time:12 minutes 


  • 18 cremini mushrooms, stems removed


  • 1/3 cup melted butter
  • 2 cups Panko breadcrumbs
  • 4 tablespoons chopped fresh parsley 
  • Filling: 
  • 2 cups fresh basil leaves 
  • 1/2 cup fresh Parmesan cheese 
  • 3 tablespoons pumpkin seeds  
  • 2 tablespoons olive oil
  • 2 tablespoons fresh garlic 
  • 2 teaspoons lemon juice 

  1. preheat the oven to 375 degrees F. 
  2.  place the mushrooms on the baking sheet upside down.
  3. Take a small bowl and mix Panko, butter, and parsley
  4. next put the basil, cheese, oil, pumpkin seeds, garlic, and lemon juice in a food processor and pulse until mixed. 
  5. next, stuff the cavity of the mushroom with the pesto filling. 
  6. Sprinkle some Panko topping on top of each mushroom afterward.
  7. Bake for 10 to 12 minutes, then serve
