Ingredients:
- 16 ounces of black beans, cooked
- 1.5 cup frozen corn kernels, thawed
- 4 tomatoes, diced
- 3 garlic cloves, chopped
- 1 medium red onion, diced (about 1/2 cup)
- 1/3 cup chopped parsley
- 1 red bell pepper, seeded and diced (about 1 cup)
- 1 tablespoon of lemon juice
Directions:
- Take a large bowl and add bell pepper, black beans, corn, tomatoes, garlic cloves, parsley, onion, and lemon juice.
- Mix it very well.
- Refrigerate for at least 20 minutes
- Once the flavors blend, serve.
