Black Bean and Corn Relish

  • 16 ounces of black beans, cooked
  • 1.5 cup frozen corn kernels, thawed
  • 4 tomatoes, diced
  • 3 garlic cloves, chopped 
  • 1 medium red onion, diced (about 1/2 cup) 
  • 1/3 cup chopped parsley 
  • 1 red bell pepper, seeded and diced (about 1 cup) 
  • 1 tablespoon of lemon juice


  1. Take a large bowl and add bell pepper, black beans, corn, tomatoes, garlic cloves, parsley, onion, and lemon juice.
  2. Mix it very well.
  3. Refrigerate for at least 20 minutes
  4. Once the flavors blend, serve.
