Black pepper, to taste Lentil Soup

Preparation Time: 20 minutes 
Cooking Time: 35 minutes 


  • 2 tablespoons vegetable oil
  • 1 green onion, chopped
  • 2 teaspoons of garlic
  • ½ teaspoon of ginger, chopped
  • 6 plum tomatoes, chopped 
  • 3 cups apricots 
  • 1 cup of mushrooms, chopped
  • 1 cup red lentils, rinsed 
  • 8 cups water 
  • 1 teaspoon of curry powder
  • 1 cup coconut milk 
  • Black pepper, to taste


  1. take a cooking pot and heat oil to saut é green onion. 
  2. Then add garlic, ginger, black pepper, and curry powder.
  3. cook until aroma comes.
  4. next add the dry apricots, water, tomatoes, mushrooms, and red lentils.
  5. Cook on high heat for about 8 minutes.
  6. next, lower the heat and cook for15 minutes with the lid on top. 
  7. Once, the lentils get soft, turn off the heat.
  8. Let it get cool. 
  9. Pour the soup into the blender. 
  10. Transfer the soup back to the pan. 
  11. Let it simmer for 15 minutes and then add in the coconut milk.
  12. Let it cook for 5 more minutes unit thickened. 
  13. Serve and enjoy hot.
