Ingredients:
- 2 tablespoons vegetable oil
- 1 green onion, chopped
- 2 teaspoons of garlic
- ½ teaspoon of ginger, chopped
- 6 plum tomatoes, chopped
- 3 cups apricots
- 1 cup of mushrooms, chopped
- 1 cup red lentils, rinsed
- 8 cups water
- 1 teaspoon of curry powder
- 1 cup coconut milk
- Black pepper, to taste
Directions:
- take a cooking pot and heat oil to saut é green onion.
- Then add garlic, ginger, black pepper, and curry powder.
- cook until aroma comes.
- next add the dry apricots, water, tomatoes, mushrooms, and red lentils.
- Cook on high heat for about 8 minutes.
- next, lower the heat and cook for15 minutes with the lid on top.
- Once, the lentils get soft, turn off the heat.
- Let it get cool.
- Pour the soup into the blender.
- Transfer the soup back to the pan.
- Let it simmer for 15 minutes and then add in the coconut milk.
- Let it cook for 5 more minutes unit thickened.
- Serve and enjoy hot.
