Coconut Shrimp

Preparation Time: 15 minutes
Cooking Time: 15 minutes 


  • 1/3 cup sweetened coconut 
  • 1/3 cup Panko breadcrumbs
  • 1/2 cup coconut milk 
  • 10-14 large shrimp, peeled and deveined 


  1. Preheat the oven to 375 degrees F. 
  2. Grease the baking sheet with oil spray.
  3. Add the coconut flakes, Panko to a food processor
  4. Pulse it to even consistency.
  5. put the Panko mixture in a separate bowl. 
  6. Place the coconut milk in another bowl.
  7. Coat each shrimp in the coconut milk and then in the Panko mixture.
  8. Add the shrimps to a baking sheet.
  9. Lightly coat the top of the shrimp with cooking spray.
  10. Bake for about 10 to 15 minutes in preheated oven.Bake for about 10 to 15 minutes in preheated oven.
  11. Once it is cooked, serve.
