Ingredients:
- 7 ounces whole-wheat fettuccine
- 1/3 tablespoon garlic, finely chopped
- 1/3 teaspoon red pepper, crushed
- 2 tablespoons olive oil
- 10 ounces raw shrimp, peeled and deveined
- ¼ cup basil, sliced
- 2 cups arugula, loosely packed
- ¼ cup plain yogurt
- 2 tablespoons butter, unsalted
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 1/3 Cup grated Parmesan cheese
Directions:
- Take a cooking pot, pour in the water, and let it boil.
- Then put in the fettuccine.
- Cook for 10 minutes.
- Reserve about half a cup of its water and drain.
- Meanwhile, take a skillet and warm oil.
- Then put in the shrimp and let it cook for 3 minutes.
- Drain and set aside.
- Add the butter to the cooking pan and cook the garlic and crushed red pepper for 1 minute; then add the arugula and let it cook for 2 minutes
- Then add cooked fettuccine, lemon zest, yogurt, and the reserved pasta water.
- Next add the lemon juice, shrimp.
- Toss in parmesan.
- Top it with basil.
- Serve.
