Green Omelet with Portobello fries

Preparation time: 10 minutes
Cooking time: 10 to 15 minutes 



  • Zucchini – ½ cup, grated
  • Fresh spinach – one cup
  • Green onion – 1 tsp, green part only 
  • Chives – one tbsp, chopped
  • Extra-virgin olive oil – 20ml
  • Eggs – four  
  • Avocado – ½  
  • Lemon rind – 1 tsp 
  • Feta cheese – optional  
  • Pepper and salt – to taste 
Portobello Fries: 

  • Portobello mushrooms – four, thickly sliced
  • White breadcrumbs – 1 ½ cups
  • Lemon rind – one tsp
  • Parmesan cheese – one tbsp
  • Eggs – two, beaten


Portobello fries: 

  1. Add parmesan cheese, lemon rind, and breadcrumbs into the bowl. 
  2. Let coat the mushroom slices in the beaten egg and then immerse in the breadcrumb mixture.
  3. Spray the olive oil onto the baking paper. Place mushrooms onto the baking paper. Place it into the oven and bake for ten to fifteen minutes.


  1. Add lemon rind and avocado into the bowl and keep it aside.
  2. Add olive oil into the pan and heat it. Add green onion (green part only) and fry for two to three minutes. Then, add spinach and zucchini and cook for one minute until wilted.
  3. Add eggs and sprinkle with chives.
  4. Cook until firm.
  5. Add feta cheese and turn the heat off. 
  6. Cut omelet in two and top with Portobello fries and sliced avocado.
