Mix Vegetable Curry with Brown Rice

Preparation Time: 20 minutes
Cooking Time: 25 minutes


  • 2 onions, chopped 
  • ½ teaspoon cumin
  • 1 teaspoon red chili flakes 
  • 1/3 teaspoon cayenne pepper 
  • 1 cup broccoli, 
  • 1 cup cabbage 
  • 1 cup carrot, cubed
  • 1 boiled beetroot, washed, peeled 
  • 4 tablespoons olive oil, for frying 
  • 1 tablespoon ginger garlic paste 
  • 2 tablespoons water 
Side Servings:  

  • 2 cups of brown rice, steamed 

  1. Use a steamer and steam all the vegetables until tender.
  2. Next, steam the brown rice as well.
  3. Now take a nonstick skillet and heat oil in it, then saut é the onions in it. 
  4. Next, add ginger and garlic paste
  5. Cook for a few seconds.
  6. Next, add red chili flakes, cumin, and cayenne pepper. 
  7. Add some water and add the steamed vegetables. 
  8. Cover it with the lid and cook for about 4 minutes.
  9. Once mixed vegetables are thickened, serve over cooked steamed rice.
