Mushroom Omelet

Preparation time: 15 minutes
Cooking time: 15 minutes 

Ingredients: 

  • Egg – one
  • Egg whites – three
  • Parmesan cheese – one tbsp, grated
  • Cheddar cheese – one tbsp, shredded, low-fat
  • Salt – ¼ tsp
  • Red pepper flakes – 1/8 tsp
  • Garlic powder – 1/8 tsp 
  • Ground nutmeg – 1/8 tsp
  • Ground black pepper – 1/8 tsp 
  • Olive oil – half tsp 
  • Fresh mushrooms – half cup, sliced
  • Green onion – ¼ cup, diced 
  • Red bell pepper – two tbsp, chopped
  • Fresh spinach – one cup, torn 
  • Fresh tomato – half cup, diced 

Instructions:  

  1. Add oil into the skillet and heat it over medium flame. Add bell pepper, green onion, and mushrooms and cook for five minutes until tender. Add spinach in the skillet and cook until wilted.

  3. Add egg mixture and diced tomato and cook for ten to fifteen minutes.
  4. Cut into the wedges.
  5.  Serve and enjoy!
