Shakshuka

Preparation time: 10 minutes
Cooking time: 10 to 15 minutes

Ingredients:  

  • Red pepper 100g, drained, chopped 
  • Tomatoes – 800g, diced and cooked
  • Tomato paste – 2 tbsp 
  • Green onion ½, minced, green part only 
  • Paprika – 1 ½ tsp 
  • Cumin – 1 tsp
  • Stevia powder – ¼ tsp
  • Salt and pepper to taste
  • Olive oil spray 
  • Eggs – six
  • Parsley – 1 tbsp, chopped 
Instructions: 

  1. Place a pot over medium flame. Sprinkle with olive oil. 
  2. Add green onion and cook until translucent.
  3. Then, add tomato paste, red pepper, and tomatoes and combine them well. Then, add stevia and spices and add them into the sauce.
  4. Sprinkle with pepper. Lower the heat. Break eggs over the sauce.
  5. Cover the pot with a lid and simmer for 10 to 15 minutes. 
  6. Garnish with fresh parsley leaves.
