Veggie Bowl

Preparation time: 10 minutes

Ingredients: 

  • White basmati rice – 100g
  • Green beans – six
  • Red pepper, peeled, diced, and roasted
  • Ripe avocado – ¼, sliced lengthways
  • Cucumber – half cup, sliced
  • Asparagus – six stems
  • Tuna – one slice
  • Pumpkin chunks – ½ cup, peeled and roasted
  • Lemon – half, cut into quarters
  • Ginger – 2 tsp, pickled

Dressing: 

  • Orange juice – ½ cup, freshly squeezed
  • Sesame oil – four tbsp
  • Salt and pepper, one pinch

Instructions: 

  1. Cook the rice and drain it well. 
  2. Blanche green beans.
  3. Grill red pepper and remove skin and then dice it.
  4. Thinly slice the avocado lengthways.
  5. Cut the cucumber thinly.  
  6. Drain six stems of asparagus.
  7. Drain tuna slices of oil.
  8. Boil the pumpkin chunks.  
  9. Place the red pepper in a mound in the middle of the plates.
  10. Arrange all ingredients on the plates.  
  11. Pour sesame oil over it. Sprinkle with pepper and salt. 
  12. Pour dressing over the bowl.
